Pour this ginger-maple-mustard dressing over your favorite vegetable salad, or use it as a dip for fresh veggies. What more could you possibly want?
- ½ cup firm silken tofu
- ¼ cup extra-virgin olive oil
- 2 tablespoons cider vinegar
- 2 teaspoons maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon ground ginger
- Pinch salt
Combine all the ingredients in a food processor. Process until as smooth as Mistress Ginger. (That means very smooth.)
